And you want me to do this on a regular basis?!?


In trying to potty train my beloved two-year-old we have been wearing big girl panties for a month and a half now. It has been going well. Occasionally, there is an accident but for the most part it has been bearable. 

Enter poop accidents...  It makes a huge mess! To which I'm supposed to clean up and swish in the toilet to remove the poop. Hmmm, totally not a fan of sticking my hand in the toilet to clean the toilet and even less so when it is to clean panties. UGH! 

This makes me think of the pressure I received to use cloth diapers when PeeWee was small. My response?  You're out of your mind! And I am ever more confident in my response!

Greek Goddess Pasta Salad

Way back in 2010, my lovely sister in law made a to die for Greek Pasta Salad. It has since been renamed a Greek Goddess Pasta Salad because... well, she is! This recipe was one that she found online year ago. I have attempted to find the original source, but it occurs many times in my basic google search. This recipe is in no way an attempt to take credit for this recipe and all credit is to remain to the original owner. If you know who is the creator of the recipe, please leave a comment and I will add credit to the original creator.

Ingredients


2 cups whole wheat penne pasta
1/4 cup red wine vinegar
1 tablespoon lemon juice
2 cloves garlic, crushed
2 teaspoons dried oregano
salt and pepper to taste
2/3 cup extra-virgin olive oil
10 cherry tomatoes, halved
1 can of artichokes, quartered
1 small red onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1/2 cucumber, sliced
1/2 cup sliced black olives
1/2 cup crumbled feta cheese

Directions

Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Rinse with cold water and drain well in a colander set in the sink.

Whisk together the vinegar, lemon juice, garlic, oregano, salt, pepper, and olive oil. Set aside. Combine pasta, tomatoes, onion, green and red peppers, cucumber, olives, artichokes, and feta cheese in a large bowl. Pour vinaigrette over the pasta and mix together. Cover and chill for 3 hours before serving.

You stupid, stupid little man!


Picture this... you're 21 weeks pregnant and while checking some emails, you see an offer for a free Burger King Gift Card. You think, "Hey a Whopper sounds SUPER! But darn, I am supposed to be watching what I spend. I'll fill out their survey for my free gift card!" Ok so it was so gulibull it was GuliCALF! (excuse the dumb childhood joke). But that is a true story. 

I figured what could a few new catalogs hurt in the mail. Now I am getting emails coming out of my you know what. To which I have been promptly unsubscribing. No big deal. Then, PeeWee and I were on our way to lunch with some friends and get a phone call from some dude wanting to get me the free baby stuff (samples and coupons) that I signed up for.  (We'll call him Stupid for ease of the whole transaction) I thanked Stupid politely for his call and told him I wasn't interested because I was not expecting to be receiving telemarketing calls and to please take me out of their system. Stupid told me that it was a one time call to get those precious samples and coupons out to me. Again, I thanked Stupid for his call and asked him to take me off his list, again. Stupid proceeded to ask me if I had any friends and family that would appreciate having the free samples and coupons and for the third time, I thanked Stupid for his call and asked him to remove me from the list for the third time. He questioned me that I did not know anyone who had small children or was pregnant.  The conversation then sounded like this:

ME: I've asked you three times now to take me off of your list and yet you continue to pressure me. 

STUPID: So we've called you before?

ME: No... but look I am pregnant and you're pissing me off! 

STUPID (The REALLY STUPID PART): Oh! Well that explains everything. 

Me thinking to myself: I may struggle for what the right words are for things these days and have to look words up in a thesaurus and dictionary but let me tell you the words that are always ready at the go generally have four letters! 

ME: Tell you what... Why don't you go BLEEP yourself and have a great day! Ok? Thanks! Bye-bye! 

Ah! It always feels better getting to use the heavy hitting F-Bomb and it not hurt those I love. 

Moral of the story? If you are a telemarketer and someone is very polite and tells you no thank you... get the hint!

We'll just get some from downstairs, Mom!

Have you seen these Twistables crayons by Crayola? 

I love 'em! They totally appeal to the teacher in me. I can just hear the way my students used to whine when their crayons did not have the sharp point like the ones on top of their heads! These crayons eliminate the need for the whining or finding the wrapper all around my classroom or now my home. 



Santa brought PeeWee a Crayola Monster Tub from Costco which he under evaluated the risks and drama it would bring. But that is another story all together. 

So fast forward 6 months and a day and PeeWee woke up at 7 AM. The optimal time for a good day for her. We went to a splash park in a neighboring town with some friends and even got to go play at Chick-fil-A with our friends for lunch! Despite our busy and active morning, PeeWee decided she did not or could not fall asleep. All I asked of her was that she play quietly for 30 minutes in her room. I pointed out her crayons and coloring books that she could play with or she had the option to watch a movie in her room. (Don't judge me and my choice to put a TV in her room)

Me to myself: Wow! She is really playing quietly up there. I am so thankful for the quiet time to regroup. 

30 minutes later I walk upstairs to find the beautiful crayons that I use when I color with her are now in all broken out of the plastic housing except for the black crayon! Had I been a goth chic I could live with the elimination of all the colors... but I am not! I like coloring with COLORS. 

Her response, "Don't worry Mom, we can get more crayons from downstairs!" 

Sigh... you know what they say, it's the little things in life. 

To some this may be small potatoes, but if we don't teach our children to take care of the little things in life like crayons, how will they ever learn to take care of the big things?

Out of this World Potato Salad

My devoted father-in-law makes a mean dish of potato salad and I could REALLY go for a HUGE glob of it right now! Hey, I'm pregnant... My waist line would be growing regardless so don't judge me! He is the type of cook who adds a pinch of this and try a little bit of that to his recipes so getting him to sit down and share his recipe took a little bit of nagging... well nagging through my husband. Luckily for us, we were in the midst of compiling family recipes to make a cookbook for my sister-in-law who was getting married. (I highly recommend Blurb for a project like this!) Well anyhow, I was able to secure this tasty recipe and have since received his blessing to share it here with you all. You better believe this is on our meal plan for the week! 





5 potatoes
2 1/2 cups Miracle Whip
2/3 cup sweet pickle relish
1/6 cup dill hamburger slice pickle juice
1 tablespoon salt
4 tablespoons sugar
dry instant mashed potato
6 hard cooked eggs
1 full stalk chopped celery
1/6 cup yellow mustard
paprika

Peel potatoes and cut in to approximately 3/8" cubes. Cook in boiling water until edges begin to soften. Do not overcook. Rinse. Drain. Cool.
Hard cook 6 eggs. Cool.

For Miracle Whip mixture, combine Miracle Whip, mustard, dill pickle juice, salt and sugar. Cool. Best to do the potatoes, eggs and Miracle Whip mixture the day before to be sure that all ingredients are cool in the refrigerator.
Slice hard cooked eggs and set aside the best slices for decoration of finished product and chop the rest.

Combine potatoes, celery and chopped eggs, mix well. Add Miracle Whip mixture and mix well. Add dry instant mashed potato to limit the amount of moisture in salad and make the product more creamy. This is the difficult part since potatoes vary greatly in moisture content. If too much dry mashed potato is added, just add a little more Miracle Whip to adjust consistency.
Transfer product to serving bowl, add sliced hard cooked egg for decoration and a sprinkle of Paprika for color. Serve. (this is a highly perishable product-keep cold at all times and discard after 7 days)

Variations: some guests like a more or less mustard color and/or taste. Some guests like a little onion in the recipe. The trick is to only add very small amounts of mustard and/or onion to taste. It is somewhat difficult to take mustard and/or onion out if too much is added. :-)

Herb Butter

This recipe is one of Mr. Right's, but we live in a community property state so I will share it with you here! No picture on this one either though as we were STARVING and couldn't wait to dig in!

1/2 Cup softened Butter (the real stuff)
1 tsp garlic powder
1/2 tsp dill weed
1/2 parsley

In a small dish, soften butter (Mr. Right used the microwave in small increments) Be careful you don't want to melt the butter! Mix in herbs... slather on a piece of french bread and enjoy! AMAZEBALLS!


Chipotle Ranch Dressing

Sorry no picture for this one, yet. 

1 Cup Ken's Buttermilk Ranch Dressing
2 Tbls Louisana Hot sauce
1 tsp Cumin
1 tsp smoked paprika

Mix ingredients and enjoy with a tasty piece of french bread or also delicious served with the Insalata Di Pollo

Insalata Di Pollo

Before we moved to the DFW area, I lived in Albuquerque for 11 years. Besides the beautiful weather, Sandia Mountains, and our family, I have been missing the most delicious salad ever from a local restaurant. The Insalata Di Pollo from Scarpas was/is the only thing I ever order from there... not that there was anything wrong with the rest of the food, but I just couldn't get enough of the tasty combination of oak wood grilled chicken, roasted red peppers, caramelized walnuts, grape tomatoes, balsamic vinaigrette and some romaine lettuce. (Salivating yet?) 

How about now? Great! Now get your grocery list and start working on this!

Now, this isn't a quick salad to make, but I promise that it will be worth every last step! 

Chicken
2 Chicken Breasts
1/2 Cup Newman's Own Balsamic Vinaigrette Lite
1/4 Cup Brown Sugar

Place all the ingredients in a zip top bag and roll around in your hands to disperse the yummy flavors. Place in the refrigerator to marinate for at least an hour. 

When ready, grill the chicken until the juices run clear. Slice and place to the side.

Balsamic Vinaigrette
1 Cup Newman's Own Balsamic Vinaigrette Lite
1/4 Cup Balsamic Vinager 
1/4 Cup Brown Sugar

In small sauce pan, combine ingredients and simmer over low heat for 10 minutes. Allow to cool before pouring into a container suitable for pouring/drizzling. I used these decorating squeeze bottles by Wilton. 

Caramelized Walnuts
I used the recipe that I found here on food.com and they were earth shatteringly delicious!

1 Cup Walnut halves
1 Tbl honey
1 Tbl water
1 tsp vegetable oil
1/4 Cup sugar
1/2 tsp salt

Preheat oven to 325° F. 
Place walnuts on a baking sheet and toast 10 to 15 minutes or until golden. Combine honey, water and oil in a skillet and bring to boil. Reduce heat to medium and stir in walnuts. Cook, stirring frequently until all liquid has evaporated, about 1 minute. Transfer nuts to a bowl. Combine sugar and salt and toss with nuts. I tossed them back in the oven for 10 minutes to ensure that the sugar all melted. Spread nuts on a cookie sheet to cool and dry. Try not to eat them all before you serve the salad. (MOST IMPORTANT STEP!)

Insalata Di Pollo
2 (heads? What do you call 1 unit) Romaine Lettuce
1 Jar Roasted Red Peppers cut into 1/2" strips
1 Jar Kalamata Olives
1 Pint grape tomatoes cut in half
Asiago Cheese
Chicken
Caramelized Walnuts
Balsamic Vinaigrette

Tear up washed lettuce into bite sized pieces and put on plate. Alternating tomatoes and olives make a circle around the lettuce on the plate. Over the top of the lettuce, lay slices of red peppers making a starbust in the center. Placed still warm slices of chicken over the red peppers. Sprinkle with caramelized walnuts and asiago cheese. Drizzle the balsamic vinaigrette over the top. TA-DA!

So if you have ever been to Scarpas, you'd know they serve their entrees with a delicious french bread already buttered with a tasty herb butter. It is divine to dip into their chipotle ranch dressing and seeing as I am pregnant, I was unwilling to give up there.

1 Million other things

When I thought I won the war!

This is a post that I never got around to proofing until now. Enjoy!

Why is it that my child stages what seems to be the world's largest Anti-sleep protest on the days that I have a million other things to do? The dishes will go undone. Dinner will not be prepped or prepared before we go to school today. Lesson plans will not be written for today, let alone the week, month, or next two months like I had dreamed of accomplishing. I will not have clean and dry jeans to wear to work today because they are sitting in the washing machine waiting to be moved to the drier while I lay on the floor in PeeWee's bedroom in a contorted mess. I lie here only after I thought I won the war on this Anti-sleep protest by strapping her wiggly little tushie into her car seat and driving around until she fell asleep (5 minutes into the car ride). I was doing the internal equivalent to an Irish Jig for my victory as I climbed the stairs to put her in bed. I came back down to analyze my mess and decide my best plan of action to attack the million other things I had to do before work when I heard, "Oh no!" Like she realized she had lost the battle. She clambered out of bed to the top of the stairs and it was ten that I realized, my child can play a great opossum and I lost.

So in my true fashion of making a short story long, I ask you oh dearest readers, what do you do when your child is refusing to sleep? Do you waive your white flag and let your  child run amuck? Or do you bear down and keep trying. (Please keep in mind in your replies, I have not written a parenting book nor have I even done this before... Also that I would just try her nap again later had we not had to go to school/work in less than an hour)

P.S. Thank you God in heaven for an amazingly supportive husband, a great group of welcoming ladies and the Mommy's Night out we are having tonight!

How do you do it?

A 2 year old who sits on the couch watching Caillou on her iPad for an hour and a half clearly is not feeling well! Had she been in the laying down position, I am confident she would have fallen asleep. She's not running a fever so I am torn whether we should call into school today or not.

Either way, mama needs to shower. This is how I entertain my under the weather PeeWee while I shower.

Lightened Up Chicken Piccata

I absolutely love the flavors from capers and have fallen head over heels for Chicken Piccata. My all time favorite was from Zio's Restaurant. But as Mr. Right and I have resolved to counting our calories, we have had to figure out a way to lighten up this tasty dinner. We loved it and we hope you will too! 

Ingredients
2 Chicken breasts(Filleted)
1 egg 

1/2 cup AP Flour
1 Cup Seasoned bread crumbs
1/2 tsp paprika
1/2 tsp garlic powder
1 tsp dried parsley

1/4 cup fresh lemon juice
1 cup chicken stock
1/4 cup brined capers
1 T Olive Oil
2 T brine from Capers


Preheat oven to 375. Fillet chicken breasts. While still on cutting board, place plastic wrap over chicken and hammer with a meat tenderizer. (I love my Pampered Chef Meat Tenderizer) Set up 3 bowls that will fit the chicken breasts (1. flour, 2. beaten egg, and 3. breadcrumb and spices) Dredge chicken breasts in flour, then beaten egg, then breadcrumb and spice mixture. Lay on a cookie sheet that has been sprayed with canola cooking spray and spray more cooking spray on top of chicken.

Bake in oven about 8 minutes each side. (may vary depending on thickness of chicken)

While baking, prepare 4 servings of Angel Hair Whole Wheat Pasta and Piccata sauce.

In a saucepan by combining lemon juice, Olive Oil, caper brine and chicken stock. Allow to reduce for 7 minutes. Add Capers and allow them to come to temperature.

Plate pasta and chicken, pour Picatta sauce over the top and garnish with Parmesan cheese. 

Pretty satisfying meal for about 540 calories!

Call me crazy, but I am a Caillou Fan!



Have you ever taken a shower with peering eyes on the other side of the glass? How about once you make a motion to turn of the water and your helpful little angel pulls your towel onto the floor picking up any dust bunnies that have congregated there since the last time you vacuumed the floor (three weeks ago). So you wrestle the towel from the kid and attempt to dry off and as fast as possible before they try give you kisses on anything he or she may perceive as "owies". You reach for your lotion and of course, they want some too. To avoid a fight, you give them the smallest squirt and all of a sudden, "It's ok Mommy! I put some cream on you!" If only cream could fix the cottage cheese that was once my butt. Sigh.

But you know what is great? Having your 2 year old want to stay downstairs to watch Caillou so that you can sneak away and take a shower without a tiny audience! Now, I know some mommies have come out with their deep seeded hatred of the whiny little tyke that graces Sprout's airwaves. I get it, the kid is constantly whining, has the world's least inventive theme song, but yet, my sweet little PeeWee schedules her whole day around him. And for now, I am thankful!

I am equally thankful that my little PeeWee is so very sweet and wants to make sure that anything that ails me is taken care of.

Slow Cooker Beef Barley Soup

This summer, I made this delicious summertime meal from Iowagirleats.com. I had a lot of leftover barley and started dreaming of the fall when I could make a delicious beef barley soup. Well, my taste buds needn't wait any longer and yours don't have to either. I found this recipe on Betty Crocker's website here.

I have made a few minor changes.


Slow Cooker Beef Barley Soup


Ingredients


cup frozen cut green beans 
cup frozen corn2 lbs pounds beef stew meat1 chopped bell pepper1 chopped large onioncup uncooked pearled barley1/2 teaspoon salt1/2 teaspoon thyme
1/2 teaspoon garlic powder 1/2 teaspoon peppercarton (32 ounces) beef broth -Reduced Sodium cans (14.5 ounces each) diced tomatoescan (8 ounces) tomato sauce

Directions

Add all ingredients in slow cooker. Mix carefully to not splatter. Place on Low heat for 8-10 hours. Go to work, run after a few little ones, go to the spa, or whatever it is that you do during the day. Come home, ladle a few spoonfuls into your favorite crock and Enjoy!

This also freezes great for those "I just don't have it in me to make a meal" kind of days!

Talk about easie peasie, lemon squeezie! (You can take me out of the classroom, but you can't take the 7 year old lingo out of me!)

Sufferin Succotash!

With this being the first Thanksgiving away from our families, Mr. Right and I have been busy meal planning for our big Turkey Day. This is no time to forgo a delicious feast nor time to go healthy, right?! Here is what we are planning on dinning on, I hope you can use one of our recipes in your home


Roasted Turkey

The Best French Bread EVER 
Ruth's Chris' Sweet Potato casserole

Corn & Edamame Succotash 


Ingredients

  • 1 1/2 cups frozen shelled edamame
  • 1 tablespoon EVOO
  • 1 chopped red bell pepper
  • 1 chopped onion
  • 2 cloves garlic, minced
  • 2 cups frozen corn kernels
  • 1/2 pint heavy cream
  • 6 Tablespoons unsalted butter
  • 2 teaspoons dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh cracked pepper


Directions

1. Steam edamame in the microwave per package directions.

2. In large, non-stick frying pan, heat EVOO. Add onion, garlic, and bell pepper. Stir frequently until they start to soften. Stir in corn and edamame. Add butter and allow to melt. Slowly incorporate heavy cream, basil, salt, and pepper. Allow to simmer for 15 minutes so all of the flavors can meld.

In the Blink of an Eye

And in the blink of an eye, it is no longer May, but November! In my meager defense, a lot has occurred in the time lapse. I settled into my Stay at Home Mom status including updating my Facebook status. After working last school year, our home was close to being quarantined for YUCKY! I made every attempt to clean up the neglected house work. I found this fantastic idea I found on Pinterest: Getting Mold Out of the Shower I was way skeptical but it works! It totally works! Thank you,  Jessica @ http://www.thisblessedlife.net/ !!

We found out in June that Mr. Right's employer was being acquired and it was uncertain whether he would have a job come the closing of the deal. Super, because I just quit my job! Thankfully, Mr. Right is a rockstar in his career and most companies would be beside themselves to have him on board. Sadly, Albuquerque isn't known for having plentiful corporations to work for in his field. Happy news, the Dallas/Fort Worth area is and he was made a job offer. Hooray!

We had minimal notice of our move to another state.... like less than 2 weeks. But in good spirits and a belief in God's plan for us, we packed up a 6x12 trailer and made a preliminary move to the area. We were fortunate to find a lovely home to rent in a quaint town outside of Dallas. 2 weeks later, we returned to Albuquerque to pack at 26ft Penske truck with the remainder of all of our worldly goods. (Thank heaven for amazing families that have our back at every turn!)

PeeWee got to be her beloved Olivia for her first Halloween to be Trick or Treating. We are definitely living in a family friendly neighborhood and we couldn't be happier!!



We are quickly acclimating to the area and have even joined a mommy & me group. We have been to the library a handful of times and decided to stay at home today for a low key kind of a day. We enjoyed making these Thankful Turkeys compliments of  http://afaithfulattempt.blogspot.com/

It's official.....

As of 1:00 today when I turned in my classroom keys, I am a stay at home mommy! I anxiously called Mr. Right to announce my unemployment.

There are so many things I want to tackle and accomplish that I just don't know where to begin! Perhaps I just take today to sit back, relax and have a pretend tea party with PeeWee. Yes, that's what I'll do! Check back frequently to see how I fare as a SAHM.

The weekend festivities kicked off Thursday evening when we got to meet the beautiful baby G! PeeWee absolutely loved her baby.

Saturday, Mr. Right, PeeWee and I had a relaxed morning hanging out before going to register PeeWee for swimming lessons. We are so excited to get to play in the pool for 2 weeks. After dealing with the less than polite teenagers running the lesson sign ups, we were off to my in-laws house for a family get together. The girls had on their matching outfits and their sunshine bottoms were absolutely adorable. What a great time to see PeeWee and Baby G together.

This morning, I woke up and looked out our patio door at our dismal looking backyard. Since we got rid of the dogs last August, weeds have overtaken our backyard. I decided that PeeWee and I would work in the backyard while Mr. Right went to cut the grass at my in-laws house. The kid actually really enjoys pulling weeds! Wow, I hope that stays the case after I can teach her not to pull the flowers! The yard still has so many more weeds to go, but we're making progress. Mr. Right stopped at the hardware store on his way home to make me the herb planters that I found here: http://www.artandappetite.com/2011/04/desert-gardening/ He is so close to being done and then I can start transplanting the seedlings that are growing in PeeWee's room. We finished the evening by getting a pizza and eating on the patio.

And with 30 calendar days left of being a working mom, I am elated to get our summer fun started!

An unexpected date with Mr Right

I woke up this morning with great plans of going in to my classroom to get some "stuff" accomplished that has been looming over head and been a black cloud for too long. And by the time I got my feet on the floor, I had a feeling that something was going to go awry. My right eye was stinging and after inspection in the bathroom mirror I noticed I had a stye in my eye. I altered my plans and decided I would shower and go buy an OTC ointment and pick up new makeup later. As I was preparing to run to the store for the ointment and a gallon of milk I was going to get PeeWee dressed in case her and Mr. Right went to visit my in-laws she would look presentable. Well, PeeWee has always been strong willed but I believe she started her terrible two's the day before her 18month birthday. She reached up and grabbed at my face and scratched my left eye in the process.

At first, I thought my eyelashes were in my eye but as the pain set on, I realized it must be worse. Mr Right called my MIL to see if she could watch PeeWee while we went to Urgent Care. Of course, my sweet MIL is always very eager to spend time with PeeWee. :) We dropped her off and we were on our way to Urgent Care for our date.

After a minimal wait time, we we're brought back to be triaged. As I opened my eye for the first time, my eyes burned with pain and tears poured out of my eyes like the first time I had my heart broken. We were to told to have a seat back in the waiting room for a bit and were finally called back. Mr Right entertained me in the waiting room and exam room by going through Pinterest explaining the pins that I could not see. (Isn't he fabulous?) The doctor came in writing drops that he claimed would fix me. I envisioned some sort of miracle drop that would glue the scratched are back together. But I was wrong. They temporarily numbed my eye and he then put in more drops that looked like highlighter juice. He shined a blue light in my eye and he called Mr Right over to see what was apparently a great chasm in my cornea. He said she most definitely caught it with her fingernail and caused a severe corneal abrasion. He prescribed Percocet and an antibacterial drop and said it will be quite painful for 2-3 days but on the good side, they no longer "patch" the eye and my FIL wouldn't need to refer to me as "Ol' Dead Eye". And the Jolly Roger would need to find a different captain this time.

We dropped off my prescription and went to grab lunch at Firehouse Subs. Of course I always see people I know when I don't have makeup on outside of the house. This time was of course a brother/sister set of students I have had this year. As I sat near them I tries to ensure they didn't see me. How embarrassing to have to explain to my students why I am wearing my sunglasses in a restaurant and why tears continually roll down my cheek.. Well anyhow, the plus side to all of it is that I got to have a surprise date with Mr Right and he has been doing a great job taking care of PeeWee and me.

I love the two of them yesterday, today, and tomorrow 2!

Sloppy Joe, Slop, Sloppy Joe!

Sloppy Joe, Slop, Sloppy Joe! 

What says childhood better than a good Sloppy Joe? So how does one craft sloppy joes without a particular canned sauce? EASY!

Ingredients
1 lb ground turkey
1 small onion
3/4 C. Catchup
4 tsp. red wine vinegar
4 tsp. worcestershire sauce
4 tsp. sugar
4 tsp. mustard
1 tsp. garlic powder

Spray cooking spray in a sautee pan. Brown ground turkey and onion. Add catchup, red wine vinegar, worcestershire, sugar, mustard and garlic powder when turkey is cooked through. Simmer until ready to serve on a toasted hamburger bun.

PeeWee and Mr. Right were caught numerous times with their hands in the pot.

It is such a wonderful experience to have PeeWee helping me in the kitchen. I started a delicious Crockpot Beef Stew that we found at: http://allrecipes.com/recipe/slow-cooker-beef-stew-i/

As we drove home anticipating our delicious dinner that was waiting for us, I started to wish we had some  biscuits to have with dinner. I decided we would venture in making out own from scratch. I found this tasty recipe in our Better Homes and Gardens Cookbook. 



Ingredients
3 Cups All Purpose flour
4 tsp. baking powder
1 tsp salt
1T. Sugar
3/4 C. butter
1 1/2 C. Buttermilk

Add all the dry ingredients and cut butter in with pastry blender. Mix until mix resembles coarse crumbs. Make a well in the center pour all buttermilk into the well and mix with fork. When mix is moistened, pour mix onto floured surface. Fold over 5-6 times. Roll out dough to 3/4" and cut out biscuits with biscuit round. Place on greased cookie sheet and bake 10 minutes in 450 degree oven.
